Store Divisions are used to add a larger grouping than Item Categories. For example, if you have equipment rentals and party rentals at your store, you could create a division for Equipment Rentals and another one for Party Rentals. Once a Store Division is created, you would set the appropriate Division in each Item Category. For example, the Table & Chair category would be set to the Party Division.
